Trial 3 – Monitoring of fish temperatures in a bin containing flake ice.

To produce more evidence of the slower cooling rate of fish stored in flake ice it was decided to monitor another bin of fish containing flake ice. Temperature checks were taken from fish stored in flake ice at regular intervals, every 15 minutes, for the first hour, then every 30 minutes for the remainder of the trial. A thermocouple was placed into the fillet of a fish and the fish was placed in the middle of a bin. The ambient temperature of the fishroom was -0.7°C
